This was the first dinner I had after returning to Michigan, I remember. Whenever my host family asks what I would like, I sometimes respond saying "is that even a question?" So, Linnea's Lasagne it is.
Unfortunately the yellow and green tomatoes did not have much flavor, though I thought the red ones were okay. I always like caprese anyway because I love mozarella.
I was once used to lasagne with loads of cheese and meatsauce, though now the first thing I think of upon hearing "lasagne" is this.
To be honest, I had this for dinner that day, for lunch the next day, and for breakfast the day after. I even enjoy heating up the leftovers-
Tomatillo salsa with green apples was interesting, and I didn't mind the apples though I prefer Rick Bayless's recipe-which I got to try couple of days later.
The pork was tender and nice with all that seasoning and went pretty well with the apple tomatillo salsa. I also really enjoyed the green beans that day!
